Cauliflower Parmesan Mash

Let me start off by saying, these are not faux mashed potatoes or a replacement for the real thing.  (Why would you ever want to replace potatoes?)

Instead, I believe cauliflower deserves some much needed attention because it really can be quite fabulous and we can all use a little more veggies in our lives.  My husband and I started off  a while back, by trying to make the fancy puree they’re always spreading on plates in restaurants and on the cooking shows.  It just never seemed to work.  I need food with a little more substance than something smeared on my plate.  It looks beautiful, but a girl’s gotta eat! Pork Banh Mi

There are few sandwiches as beautiful as the Banh Mi.

The brightly colored veggies, thinly sliced jalapeno and multitude of cilantro are so intriguing.  Like the wrapping on a box filled with a surprise.  I have to admit the first time I tried one, I was skeptical of what lay underneath all that goodness, only to find even more goodness.

My first experience with Banh Mi was a couple of years ago.  I somehow convinced my husband to share one which was quite difficult since he doesn’t care for jalapeno, mayonnaise, or cilantro.  I think the only thing that sold him was the grilled pork and the baguette.  Well, after one bite he began to devour the entire thing.  I was lucky I even had a chance to try it.

Chicken & Cheese Enchiladas (Heavy on the Cheese)

I Left My Heart in NYC

Nothing can replace the feeling of standing on top of the Empire State Building looking out over the most incredible city in the world.  Ever since seeing ‘An Affair to Remember’, I’ve dreamed of what it would be like to meet my Cary Grant at this building in the sky.  Lucky for me, I already had my leading man with me for my first trip to this amazing place and it was beyond my wildest dreams. Grilled Romaine Salad

Grilling beautiful crisp romaine lettuce???  Yes!!!

I know this isn’t something new to the food world, but I had never tried it until just a few months ago.  I always thought it sounded crazy, but now I know what I was missing out on.  My husband and I had our first taste of grilled romaine at our favorite Mexican restaurant.  My mind was blown!  It was the most amazing flavor of char from the grill while still keeping it’s fresh, crisp texture. Heath’s Favorite Breakfast Burrito

If your Sunday mornings are anything like mine, you wake up, start your coffee and get some bacon in the oven.  In that order.

Breakfast has always been one of my favorite meals and nothing smells better on a cozy Sunday morning than Applewood smoked bacon wafting throughout the house.  My husband, Heath, loves bacon and his favorite breakfast is my bacon breakfast burrito.  I actually wooed him with my bacon when we first started dating.  He’s either really easy to please or it’s just that fantastic.  I’ll go for the latter. Mom’s Spaghetti & Meatballs

This IS NOT your typical spaghetti & meatballs!

Growing up, this was definitely my most requested meal.  The silky, buttery noodles covered in a rich, hearty tomato sauce, topped off with garlicky, herbaceous morsels of meat.  The smell of this delicious sauce would fill the house for hours and I would wait in anticipation for my chance to taste it.  Through the years, I tried many versions of this classic, but none could ever take the place of my mother’s.
