Cauliflower Parmesan Mash

Let me start off by saying, these are not faux mashed potatoes or a replacement for the real thing.  (Why would you ever want to replace potatoes?)

Instead, I believe cauliflower deserves some much needed attention because it really can be quite fabulous and we can all use a little more veggies in our lives.  My husband and I started off  a while back, by trying to make the fancy puree they’re always spreading on plates in restaurants and on the cooking shows.  It just never seemed to work.  I need food with a little more substance than something smeared on my plate.  It looks beautiful, but a girl’s gotta eat!

Aside from having very few ingredients and being relatively easy to make, this mash is filled with parmesan cheese and roasted garlic.  Mmmmmmmm……..cheese!

You’ll want to roast the garlic first since it takes a while.  The cauliflower takes about 15 to 20 minutes to steam, depending on how you like it.  If you steam it too much, your mash will turn into more of a puree.  After it’s cooked, spoon it onto a plate with a paper towel to let the water drain off.  Once that’s done, you just toss the cauliflower, garlic, cheese, butter, salt and pepper in the blender and let it mash away.  Top with chives if you like and you’ll be in cauliflower heaven!  I know, cauliflower, heaven, sounds crazy, but it’s true.

Cauliflower Parmesan Mash

Serves 4

  • 6 cups steamed cauliflower, drained of water (About 1 large head)
  • 1 head of roasted garlic (Wrap garlic in foil and roast in oven at 400 degrees for 30 – 35 minutes)
  • 1/2 cup shredded parmesan cheese
  • 2 Tablespoons butter
  • salt and pepper to taste
  • 1 Tablespoons chopped chives to garnish

While the cauliflower is still warm, place all the ingredients (excluding the chives), into a blender.  Blend the mixture on the mix setting until you have your desired consistency.  Place the mixture in a bowl and top with the chives.

That’s it.  Now eat!
