Let me start off by saying, these are not faux mashed potatoes or a replacement for the real thing. (Why would you ever want to replace potatoes?)
Instead, I believe cauliflower deserves some much needed attention because it really can be quite fabulous and we can all use a little more veggies in our lives. My husband and I started off a while back, by trying to make the fancy puree they’re always spreading on plates in restaurants and on the cooking shows. It just never seemed to work.
